Varietal composition: Serifiotiko, native variety of Serifos
Orange. Ripe grapes of the Serifiotiko variety, organically grown from self-rooted stems at least 40 years old, are fermented together with the marcs, with native yeasts and minimal interventions. Maturing in light wine lees for six months gives depth and complexity, giving us a gastronomic wine that accompanies complex dishes and takes time, even years, to evolve.
The wines are grown in a vineyard with a small acreage yield in a natural way. The location is north of Serifos on a steep mountain slope opposite Kythnos and with a northern orientation.
